Garlic Salmon with Tomato Basil Relish

We had a couple warmer days this week and I’m starting to feel the excitement of summer coming. I can’t believe there are only two and a half more months of school and we are already signing up for summer camps! I’m really looking forward to BBQ’s, beach days with friends, enjoying warm weather and eating outside on our patio. So, how does this relate to salmon? When I think about warm weather I think about summer, then I think of the beach and the ocean and there are fish in the ocean of course. Ok, I hard a time tying this one together. Anyway…

This gem of a recipe is super simple with lots of flavor thanks to the Tomato Basil relish. It caught my attention because we really like Caprese Salad and this is pretty close to the same flavors. I wasn’t sure how I’d like the tomato combination with the fish but it it was yummy and the lemon in the relish worked really well with the salmon. The recipe comes from The Cozy Apron and Ingrid says “Taste what’s good and pass it on”. I totally agree with her so, here it is.

Serves 4
Ingredients
  • 4 skinless, thicker-cut salmon filets (I used skin on wild salmon and took the skin off before serving, it just slides right off) Next time I’m going to ask the nice fish counter man to take off the skin.
  • 2 garlic cloves, pressed with garlic press
  • ½ teaspoon salt
  • ½ teaspoon fresh pepper
  • ½ teaspoon paprika
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 lemon, cut in quarters for garnish

  • ½ cup cherry tomatoes, quartered (I used 3 Roma tomatoes since it’s what I had on hand)
  • 2 cloves garlic, pressed through garlic press
  • 1 teaspoon lemon zest
  • 1 teaspoon lemon juice
  • ¼ teaspoon sea salt
  • Pinch of fresh pepper
  • ¼ cup fresh basil, chopped
  • 2 teaspoon olive oil
Instructions
  1. Preheat oven to 400 and line a baking sheet with foil or parchment paper.
  2. In a small dish combine garlic, salt, pepper, paprika, lemon zest and juice and olive oil. Whisk with a fork to combine.
  3. Place the salmon on the baking sheet And rub the mixture from above evenly onto each fillet. Set aside to marinate for 35 minutes. (Make relish and other side dishes. I did steamed asparagus and white rice)
  4. Broil in the top half of your oven for 8-10 minutes until moist and flaky. Keep an eye on it after 5-6 minutes. It should be a little browned.
  5. In a small bowl mix together all ingredients, cover and refrigerate until ready to serve with salmon.
